I have been working on the sequel to Irresistibly Delicious and although the sequel takes place in the same town, it's quite different. One thing that is consistent is the cooking and good food served at the Cozy Cove Inn.

Broccoli Chicken Casserole

Heat oven to 350 degrees

Ingredients List:
4 boneless skinless chicken breasts diced into 1/2 inch pieces.
1 large frozen package of broccoli florets or one bunch of fresh broccoli florets
1 can cream of mushroom soup
1 cup sour cream
1/2 cup of milk
8 ounces of cheddar cheese shredded
1/2 cup Durkey Fried onions
Salt 
Pepper
Garlic powder
Onion Powder

In a large casserole dish place broccoli. Add chicken on top. Season with salt, pepper, garlic powder, and onion powder to taste.
In a bowl mix cream of mushroom soup, sour cream, and milk. Pour over chicken and cover completely. Now add a layer of shredded cheddar cheese. Sprinkle the top with fried onions.

Bake for 1 hour or until top is browned and chicken is cooked all the way through.

Writing 'Till It Hurts

Ever have those mornings when you wake up fine but the happy highlight of your day is your first cup of coffee and it goes downhill from there? Yesterday was one of those days. I already have a knot on the tendon at the base of my left thumb and I managed to really aggravate the poor, abused hand. It started with lunch.

I somehow managed to get pickle relish on my fingers and not having a paper towel handy, I chose to fling my hand toward the faucet and sink. I just remember turning slightly and thinking I'll run my hand under the water and get the pickle relish off. Simple enough. Except I was half day dreaming and didn't realize my late m-i-l's heavy duty glass pitcher from the 1940's sat on the counter top in the direct path of my hand. Smack! Thankfully I didn't hurt the pitcher, but my hand didn't fare as well.

So instead of working on my love scenes, (I understand writing 'til it hurts, and pushing through the pain to pour out your soul, but come on, I didn't know they meant literally!) I sat in the living room with an ice pack on my hand, watching what passes for daytime TV these days. I knew things were bad, but when the best show on is a rerun of a 2010 episode of Kitchen Nightmares, you know daytime TV has gone to hell.

So I did what many people with a modicum of intellect do. I turned off the telly and grabbed a book. I chose to start Robert McCammon's Speaks The Nightbird, Volume 2: Evil Unveiled. Somewhere in a steam trunk, tucked away in a closet, is volume 1 I think. But I was in no condition yesterday to dig through trunks of books to find it.*

Reading Outside Your Genre

I find it a nice change of pace to switch things up and read outside my genre. For those of you who follow my various blogs, you know historical novels are not my favorite cuppa tea. But every now and then I get the urge to try something different outside my comfort zone. The latest book I finished fits the description very well.

Available as a free read at B&N online for the Nook, I downloaded a story called The Fox, by author Arlene Radasky. The book (although it does have paranormal elements) is a sweeping historical romance set in part during the time of the Roman empire's occupation of Britain. The story is told through the eyes of two main characters, Jahna (a Celt) and Aine (a modern day archeologist).

Perhaps the story appealed to me because I'm part Celt, or that I liked the way the story moved between the two characters, separated by time. But whatever the reason, I soon found myself engrossed in the book, wondering what would happen next. This is not a 'light' book you'd pick up for a quick read, but it will stop and make you think about the obstacles women have faced throughout history and appreciate the struggles they made so we can have the gifts we have today.

My 34/60 Challenge continues: On The Hunt with Gena Showalter & Co.

My 34/60 Challenge: Must Love Hellhounds

Slowly whittling down my TBR pile in the 34/60 challenge, with my latest addition to the finished pile, Must Love Hellhounds, an anthology by NYT bestelling authors Charlaine Harris, Nalini Singh, Ilona Andrews, and Meljean Brook. I love anthologies and this is no exception. I think you'll enjoy the story mix.

My 34/60 Challenge: Katrina: The Beginning by Elizabeth Loraine


As a Vampire being hunted was nothing new.

My 34/60 Challenge: Dark Stranger by Susan Sizemore

My 34/60 challenge continues as I whittle down the pile.  Just finished Dark Stranger by Susan Sizemore. I am a very quirky type of reader, so what I love or like isn't always what everyone else adores. Keeping that in mind, I have to risk saying that I thought Dark Stranger was the best Susan Sizemore book I've read in a long time. It's got a terrific twist, engaging characters with actual depth to them, and a kick-ass premise that Ms. Sizemore delivers on. The thing is, I preferred her "book in a book" to all the books in her actual series combined. I'd love to read the sequel to this story.


A twist of fate made Zoe Pappas heir to the Byzant throne. Bound by duty and devotion to keep the Empire safe, Zoe is captured while on a secret diplomatic mission and sent to an underground prisoner-of-war camp. In this strange, shadowy place, residents are governed by fellow inmate General Matthias "Doc" Raven, whose powerful magnetism rouses an urgent desire in Zoe. But the intensity of her attraction is matched by her surprise at discovering that Doc has a secret of his own: he is a vampire.

34 Books in 60 Days!

This is an insane goal for me, given my schedule, but I really want to try for it. I bought 34 books the other day at my local Borders (which is closing and this is their last week open). I'm giving myself 60 days to read them all. Each time I finish reading one of the books, I'll check them off in a post here on my blog to keep record. I'll also post the cover and the blurb, but not necessarily a review.

What If Your Urban Fantasy Isn't Urban?

I love the hybrid of modern fantasy and paranormal, but what if the story you're reading doesn't fit within the 'urban' aspect of the genre? Why do so many books from this new breed of fantasy have to take place in a big city setting?

I'm sure paranormal events with paranormal beings happen everywhere. Look at Bigfoot. He's not a New York City or L.A. fixture (at least I don't think so although you may have dated his cousin recently, lol). He's out in his natural environment, doing whatever makes a sasquatch happy out in the woods. :P

So why don't we see more country or suburban fantasy novels?  Do readers relate more to the gritty grime and dark alleyways of the urban myth and legend? Oh, btw, if you see Sash, tell him I'm still waiting for that one on one interview a la Barbara Walters.
